Introduction & Role
My name is Louise Fröhlich, and I am the Chef Pâtissière, leading the pastry department as Head of Department. I am responsible for the creative and seasonal development of the entire dessert and confectionery portfolio — ranging from desserts, cakes, and pastries to room service amenities, ice cream selections, pralines, as well as banquet and event desserts.
In addition, I lead the pastry team, organize daily workflows, and plan staff deployment, always guided by the highest quality standards and a deep attention to detail.

Creativity and craftsmanship are at the heart of everything we do. We are deeply involved in the design and continuous development of our products and value the hands-on, artisanal nature of our work.
Our daily operations are highly diverse, encompassing à la carte production, banquet events, guest workshops, and bespoke special requests. This variety allows us to continuously challenge ourselves creatively and professionally.
We also work closely and across departments with our outlets such as Wintergarten, Fritz & Felix, as well as with the events and marketing teams — particularly in the context of workshops, special events, and the development of innovative new products.
