Missions: The Sous Chef Sushi supports the Executive Chef in leading the sushi station, ensuring high-quality preparation, presentation, and service of Japanese dishes. This role is responsible for maintaining culinary standards, supervising daily operations, and ensuring compliance with food safety regulations. The Sous Chef Sushi must demonstrate strong technical skills, attention to detail, and the ability to coordinate the team efficiently during service.
Profile: The Sous Chef Sushi assists Executive Chef in the daily management of the sushi section, preparing sushi, sashimi, and other Japanese specialties in accordance with established recipes and presentation standards. They monitor the freshness, rotation, and overall quality of fish and ingredients while ensuring full compliance with HACCP guidelines and food safety regulations. The role requires strong expertise in traditional Japanese cutting techniques and culinary methods, along with advanced knowledge of sushi, sashimi, nigiri, maki, uramaki, temaki, and related preparations.
They must be experienced in proper fish handling, freezing/defrosting processes, and raw fish storage methods, and be able to manage mise en place and maintain workflow during high-demand service periods. Additionally, the Sous Chef Sushi leads and supports kitchen staff, manages stock levels, assists with ordering, helps control food cost, and contributes to the creation of new dishes and seasonal menus.
They also train junior staff in cutting techniques, preparation methods, and professional conduct, maintain the cleanliness and organization of the sushi station and equipment, and act as the Head Sushi Chef in their absence.
At least 4 years of experience in Japanese restaurants or sushi bars, preferably high-end, are required.
